Considered a food for the poor, sardines were a staple food, especially in cities like Lisbon, where it was, and still is tradition to eat them roasted during the Santo Antonio festivals, the patron saint of Lisbon.
The first artistic sardines date back to the 19th century and came from the hands of Rapahel Bordalo Pinheiro (1846-1905), but it was not until 2003, when the Lisbon festival sardines competition was created, when they began to become popular until they became an icon of Lisbon’s culture and gastronomy.
